BISCUIT OF SORRENTO AND ACTIVESTONE COMBINE
A perfect union for an unprecedented cooking quality. The innovative cooking system of our 550 combines the characteristics of the famous Sorrento Biscuit, a very porous brick that allows you to warm up early and retain heat for a long time, with the properties of Activestone.
The extraction system retains the fumes keeping the temperature stable in the cooking chamber without creating cold or excessively hot spots. The temperature-controlled proofer reaches 60°C and contains up to a maximum of 24 plastic boxes for your best dough to leaven.
The 550 is equipped with a microprocessor that manages all the functions of the oven. The use of the latest generation electronics allows you to have constant control of the temperature of the oven chamber, from the front to the rear.
